Recipe
This is an old family recipe - the measurements are in pounds and ounces.
1lb currents
1lb raisings
1lb sultanas
1/4 lb mixed peel (or extra fruit)
1lb suet
7 oz flour
salt (no amount specified)
1/4lb breadcrumbs
10 oz brown sugar
2 oz ground almonds
1 oz mixed spice
6 eggs
juice of 2 lemons plus peel
brandy or stout (again no amount specified)

We have always divided the mixture between 2 or 3 pudding basins, covered them with greaseproof paper tied in place with string and boiled in a large saucepan.
Boil for 6 hours
The puddings keep very well. Often through the years we have had "last year's" pudding for Christmas. The flavour improves well with keeping.
Variations
Vegetarian - Use vegetarian suet in place of the suet
Wheat free - Replace the breadcrumbs with wheat free breadcrumbs
Nut allergy - Don't add the almonds, or replace with another nut the sufferer does not react to
Crunchy - substitute flaked almonds for the ground almonds to give a crunchier texture
Cranberry - Substitute fresh cranberries for some of the fruit
